Ingredients and method:

  • 1 lb. Ground beef 10 - 15 % fat
  • 1 egg 1 roll
  • 4 tablespoon milk
  • 2 minced cloves of garlic
  • oil for fr ting
  • salt and pepper
  • With the soaked roll in milk, mix with the remaining ingredients, meat, garlic and egg. Form into small balls and sate in hot oil in the frying pan. Serve with rice, pasta, red beans and marenara sauce.

Ingredients and method:

  • 4 cups chicken broth
  • l lb. potatoes
  • 1/4 stick of leek
  • 1/2 st؛ck of celery
  • 1 carrot
  • 2 oz. diced bacon
  • 2 tablespoon. diced onions
  • salt and pepper to seasoning
  • Sautee the onion and bacon till golden. in sepatate casserole boil the peeled and quartered potatoes and the cleaned vegetables in the chicken broth until tender. Allow mixture to cool slightly and fill into the blender.. mix to a smooth paste , season then add the diced bacon and golden brown.

Ingredients and method:

  • 2 cups grated fresg corn
  • 2 well beaten-eggs youlks,
  • 1/4 cup milk stir in with the eggs youlks.
  • salt and pepper to taste
  • Beat egg whites until fluffy. Fold in. Turn into greased 1 qt. baking dish. Set baking dish in pan of boiling water, and bake 30 minutes at 350°.

  • Mix thoroughly 6 finely grated raw potaoes.
  • 1 teaspoon salt,
  • 1/4 cup flour.
  • 1/4 cup grated parmesan cheese
  • Drop mixture by tablespoons into hot greased skillet. Brown on one side. Turn. Brown on other side, sprikle cheese on top.

Ingredients and method:

  • Separate 2 Eggs.
  • Beat whites until stiff.
  • Mix yolks with 2 Cups corn fresh or canned
  • 2 Tbs. flour,
  • Salt and oepper.
  • Fold in egg whites. Drop by teaspoons onto hot, greased skillet. Brown about 2 minutes on one side, turn, brown on other side.

Ingredients:

  • 1 cup mayonnaise
  • 3 tablespoons chopped gherkins
  • 1 tablespoon chopped capers
  • 1 tablespoon chopped parsley
  • 2 tablespoons lebanese green olives
  • 1 tablespoon chopped shallots
  • 1 tablespoon lemon juice

Method:

1. Mix all ingredients well; chill.

2. Serve with fried shrimp or fish.

Ingredients:

  • 2 cups dried red beans
  • 6 cups water
  • 1/4 Vegitable oil
  • 2 tablespoon tomato paste
  • 2 cups diced ham,
  • 1/2 lb smoked sausage
  • 1 cup chopped onions
  • 4 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1 teaspoon oregano
  • 4 cups hot cooked rice
  • salt and black pepper to taste

Method:

1-Rinse beans; soak in water 30 minutes,then cook slowly until tender, about

two hours (add boiling water as necessary).

2. Add salt and pepper to taste.

3. Heat the oil in skillet; saute the sausages, then add onions and garlic, cooking until translucent.

4. Add the tamato paste nad oregano, stir into cooked beans along with parsley.

5. Remove about 1 cup beans; mash or put through a sieve and stir into beans (this will thicken the juices).

6. Serve over hot rice.
