Lamb Liver Appetizer

Lamb Liver with Rice

Lamb Liver

Ingredients:

  • I/2 pound lamb liver
  • 2 tablespoon vegetable oil
  • 1/3 cup chopped green pepper
  • 1 cup chopped tomato
  • 1 teaspoon tomato paste
  • 1/2 teaspoon basil
  • 1 cup chicken broth
  • 2 tablespoon wine sherry
  • I/2 teaspoon salt
  • 2 gloves minced garlic
  • 1 cup cooked rice
  • freshly ground pepper
  • pinch of salt to taste

Method:

1. Cut liver into serving pieces.

2. In midsummer sauce, add oil and garlic and pepper, brown liver quickly in oil on both sides.

3. Add all other ingredients except rice; stir for one minute, cover and simmer 45 minutes, or until liver is tender.

4. Uncover and allow sauce to thicken, if necessary.

5. Serve over mound of hot rice.

Black-eyed Beans with Lamb

Lamb with Beans

Ingredients:

  • 2 tablespoons vegetable oil
  • 2 tablespoons flour
  • 1 1/2 pound lamb rib-lets
  • 2 cans diced tomatoes
  • 4 cups chicken broth
  • 1 cup white wine
  • 1/2 cup chopped parsley
  • 1/2 lemon, sliced and seeded
  • 2 teaspoons salt
  • 1 teaspoon thyme
  • 1 bayleaf
  • 1 teaspoon minced garlic
  • 2 cups black-eyed peas

Method:

1. Heat oil in large Dutch oven; dust rlblets with flour and brown on all sides in hot oil.

2. Drain fat from pan; add tomatoes, broth, wine, parsley, lemon slices, black-eyed and seasonings.

3. Cover and simmer 1 hours.

4 Serve on top of Saffron or white rice

Liver Pate

Ingredients:

  • 3 oz. cooked lamb liver
  • 1 hard-boiled egg
  • 2 tablespoon cream
  • 1 small strip of onion
  • 1 tablespoon cognac
  • salt and freshly ground pepper

Method:

1 in low speed food processor or hand blender, blend the liver for about 1 minute

2 Add hard boiled egg, and when smooth add cream, onion and seasoning, blend for one further minute.

3 allow to set before serving. Recommended especially as a supper snack with fingers of toast, or savory biscuits.

Meat Balls 2

This is another recipe for the meatballs, with the right balanced spices, onion and garlic, it can be used on the side one of our recipes Onion Brown Sauce

Ingredients:

Serve: 4

  • 1 pound minced meat
  • 1 egg
  • 1 soaked and well squeezed roll
  • 1/2 cup water
  • 4 tablespoons diced onion
  • 1 teaspoon ground Allspice
  • 2 cloves minced garlic
  • 1 tsp. flour
  • salt freshly ground pepper

Method:

1 Soak the bread in cup of water for 15 min, you may use a about 5 tablespoon of bread crumbs if preferred without soaking in water

2 Place the egg into a bow and whisk it for about 1minute

3 Add the other ingredient and mix it very well

4 let the mixture rest for 14 before start making the balls, if bread- crumbs and water have been used, the mixture should be allowed to rest for at least 30 min..

5 Form into balls with wet hands, coat with flour and fry in hot fat in a fraying pan

Syrian Grilled Marinated Lamb Chops

Mediterranean Grilled Lamb

Ingredients:

  • 4 - 6 lamb chops
  • 6 tablespoons olive oil
  • 2 cloves minced garlic
  • 3 table spoon yogurt
  • 4 tablespoons lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoon freshly ground black pepper
  • sea salt

Method:

Place the lamb chops in a shallow dish . Mix olive oil, lemon juice, garlic, and cumin and yogurt, and pour over steaks. Rub the marination mixture well on all sides of the lamb shops. Cover and refrigerate for 12-24 hours, turning the chops once or twice during this time so that they absorb all the flavors.

When ready to cook, heat iron grill pan over medium heat until it is very hot. Place the chops on grill pan and grill for 3-5 minutes on one side. Season with salt and pepper to taste. Turn steaks, brush with marinade and grill on other side for 3-5 minutes, little more the way you like it to be cooked. Serve immediately.


Mediterranean Lamp Stew with Yogurt

Mediterranean lamp stew yogurt

Trim the lamb of most of the fat. Season the pieces with salt and pepper. Heat the oil in a heavy oven proof casserole, add the cloves, paprika, peppers and peppercorns, then heat 2-3 minutes. Transfer the spices to a food processor.

Increase the heat to high, add the lamb to the casserole, and brown well on all sides, you may need to do 2 or 3 batches. Remove the lamb to a plate, add the onions to the casserole, and sauté until become golden and translucent, stirring constantly 5-7 minutes.

To make the coconut sauce: Heat a heavy skillet over low heat 3-5 minutes. Add the cumin, coriander , coconut milk, and the halved almonds then roast it for 5 -6 min until become a gold in color. Add the roasted spices and nuts to those in food processor together with the garlic, ginger, allspice and yogurt, process until smooth.

Stir the sauce and tomato paste into the browned onions in the casserole, add the water and simmer, stirring to dissolve pan juices. Return the meat to the casserole , bring to a boil , cover, and simmer stirring occasionally on low heat, until done, 2 - 2 1/2 hours. If the casserole gets dry, add more water. 

Transfer the stew to a warmed serving bowl and serve it with white or saffron rice on the side

INGREDIENTS:

  • 2 poundsI boned lamb shoulder, cut in cubs 1 in pieces
  • salt and pepper
  • 1/2 cup olive oil
  • I teaspoon whole cloves
  • 2 teaspoon paprika
  • 1 teaspoon whole peppercorns
  • 1 teaspoon ground allspices
  • 2 onions, finely chopped
  • FOR THE SAUCE

  • 1 cup blanched and halved almond
  • 2 teaspoons ground cumin
  • 1 tablespoon ground coriander
  • 1/2 cup of coconut milk 
  • l tablespoon minced ginger 
  • I tablespoon tomato paste 
  • 1/2 cup plain yogurt
