Brochettes of Haddock or Cod

Cod Brochettes Kebab

Ingredients:

  • 1 1/2 lb Haddock or Cod
  • 4 medium tomatoes cut wedges
  • 3 small onions, cut wedges
  • 1 bell green pepper

Basting Sauce

  • 8 tablespoons olive oil
  • 1/2 teaspoon ground fennel
  • 2 tablespoon lemon juice
  • 4 table Spoon dry white wine
  • 1/2 onion, finely chopped
  • Salt and pepper

Method:

  1. For basting sauce: Combine olive oil, white wine, fennel, lemon juice onion and salt and pepper, in a large shallow bowl.
  2. Cut the cod or haddock into chunks ( 1 1/2 inches square). Any thin pieces should be rolled up into pieces the same size as chunks.
  3. Slice tomatoes and onions as wedges, each will be 6 or 8 wedges
  4. Place fish pieces in bowl with basting sauce. cover half the bowl with slices of tomato and the other half with slices of onion. Place bowl in the refrigerator for 2 - 4 hours.
  5. When it's ready to cook, thread the alternate pieces of fish and tomato and onion slices on skwers, starting and ending with a chunk of fish, and dividing the ingredients equally between skewers.
  6. Arrange skewers on oven pan; brush with half the basting sauce and place under a preheated hot grill. Reduce heat to moderate and grill for 4- 5 minutes. T
  7. urn skewers; baste with remaining sauce and continue to grill for 4-5 minutes longer, or until fish flakes easily with a fork. Serve immediately on a bed of rice.

Ingredients:

  • 1 whole egg
  • 1/2 cup vegetable oil
  • 1/4 cup olive oil
  • 1 tablespoon mustard
  • 1 tablespoons lemon juice
  • 1 tablespoon wine vinegar
  • 1 pinch sugar
  • 1 pinch salt
  • 1 table spoon cognac(optional)

Method:

  1. Eggs and oil should be in room temperature. it is therefore recommended to remove all the ingredients from the refrigerator in good time before use.
  2. In blender processor, add the olive oil, vegetable oil, salt and the egg, turn on the machine running and add other ingredients. keep it running until the mayonnaise has reached the desired consistency.

Onion Brown and Smooth Sauce

Ingredients:

  • 5 tablespoon flour
  • 2 diced onion
  • 1/2 stick butter
  • 2 tablespoon vegetable oil
  • 1 cup chicken stock
  • 1 cup whole milk
  • 2 teaspoon lemon juice
  • salt and pepper

Method:

In heave saucepan, add melt the butter and oil, add onion, salt and freshly grind pepper, and keep stirring for 3- 4 min until the onion become golden color.

Add the flour and let it simmer for another 2 - min, then add milk and stuck and mix with whisker. Translate the mixture while it's warm to blender and leave it to rotate until perfectly smooth.

Return the smooth mixture to the saucepan and and keep stirring, let it simmer till the boiling point. serve it over a meatball, lamb chops or steak!

Fast Vegetable Spring Soup

Potato Gnocchi di Spinaci and Cheese

Spinach Gnocchi

Ingredients:

  • 2 carrots
  • 1 chopped onion (very small)
  • 1 sprig parsley (about one cup)
  • 1 stick celery
  • 1 potato
  • 3 cups chicken stock (or water for vegan)
  • 2 tomatoes peeled
  • 2 cloves garlic
  • 3 tablespoon olive oil
  • salt and fresh pepper

Method:

  1. Place all vegetables, parsley, carrots, celery, and potato in blender with the water or stock, and blend for 1 minute till gravel. You may leave one teaspoon of parsley for garnishing.
  2. In a heavy saucepan, add the olive oil, chopped onion and minced garlic, stir on medium heat for 2 -3 min.
  3. add the mixture above and let it simmer for 10 - 15 min.. enjoy!

Syrian Grilled Marinated Lamb Chops

Mediterranean Grilled Lamb

Ingredients:

  • 4 - 6 lamb chops
  • 6 tablespoons olive oil
  • 2 cloves minced garlic
  • 3 table spoon yogurt
  • 4 tablespoons lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoon freshly ground black pepper
  • sea salt

Method:

Place the lamb chops in a shallow dish . Mix olive oil, lemon juice, garlic, and cumin and yogurt, and pour over steaks. Rub the marination mixture well on all sides of the lamb shops. Cover and refrigerate for 12-24 hours, turning the chops once or twice during this time so that they absorb all the flavors.

When ready to cook, heat iron grill pan over medium heat until it is very hot. Place the chops on grill pan and grill for 3-5 minutes on one side. Season with salt and pepper to taste. Turn steaks, brush with marinade and grill on other side for 3-5 minutes, little more the way you like it to be cooked. Serve immediately.


Tomato Soup

Tomato Soupe

Pour the tomatoes and blend to a puree in an electric blender. Put puree through fine sieve.

In a heavy saucepan add the olive oil, garlic, onion, chillies and the flour, simmer 2 - 3 min. Add the tomato puree and simmer for till the boiling point.

Stir in lemon juicean, grated rind, sugar, sugar and oregano.

3 Just before serving, add cream and mix well. Pour into a bowl and garnish with chives.. enjoy.

  • 3 tablespoons olive oil
  • 1 teaspoon oregano
  • 1 table spoon flour
  • chives
  • 2 cloves minced garlic

Green Asparagus Peas Consomme Soup

Green vegetable Soup Consommé

Peel,avocado pear. Strain lemon juice over avocado to preserve color.

Add the cooked asparagus and frozone peas, and parsly to avocado. Flavor with salt and white pepper and cayenne.

Bring chicken stock gently to the boil, and add the vegetable, mix it in blender for the wright consistency just before serving.. enjoy
